Fabulous Coconut Snowball Dip

I know that I have been posting a lot about dips lately. When I think of my favorite and easiest recipes to share, dips always land at the top of my list. This week’s recipe directly correlates with last week’s apple brickle dip recipe (click to read about The Best Apple Brickle Dip).
For some reason, I connect foods that shouldn’t be associated with each other. For instance, I loved banana and peanut butter sandwiches when I was young. However, I also loved banana and mayonnaise sandwiches. So, somewhere in my childhood, I began feeling guilty if I ate one but not the other. So, to this day, if I make a banana and peanut butter sandwich, I also make a banana and mayonnaise sandwich after it. I know there is some twisted logic in all of this, and I probably need therapy, but it’s the truth.
The same logic applies when making one of my favorites, coconut snowball dip. It is an easy family recipe that I LOVE. Snowball dip is the perfect food item to take whenever you are attending a function or event.
A few years ago, during special education month at school, I thought it would be a neat idea to thank all the teachers and staff working hard with our special needs students. So, our department hosted a Take a Dip into Special Education drop-in at school. We had many sweet and savory dips for the teachers to enjoy.
In deciding what to bring to the function, it was not hard to choose the savory dips. One of my dips was Cowboy Caviar (click to read about this savory dip), but selecting sweet dips was difficult. After my friends, Anita and Richard, shared their apple brickle dip recipe with me, I began loving that dip as much as I loved the coconut snowball dip. Since I could not pick between the two, and because I have an equal affinity for them, we had both. Now, it is hard to bring one without the other… or write a blog post about one without the other…
I am excited to share the fabulous coconut snowball dip with you. It is pretty spectacular!
Fabulous Coconut Snowball Dip

16 ounces of Cool Whip
1-15 ounce can of Coco Lopez Real Cream of Coconut
8 ounces of whipped cream cheese
14 ounces of sweetened coconut flakes
Chocolate and honey graham crackers
Using a spatula (no mixer necessary), scoop the Cool Whip into a large bowl.

Add the whipped cream cheese and stir well.

Open the Coco Lopez, and scrape around the can with a knife to loosen the coconut solids. Next, pour the entire can of cream of coconut into the bowl and mix. Real cream of coconut has a tan/grey/pink coloring, so don’t be alarmed when you see the solids in the can.

Add 3/4 bag of coconut flakes into the mixture and stir.

Refrigerate well, preferably overnight. Before serving, sprinkle the residual bag of coconut flakes over the dip. Serve with chocolate and honey graham crackers.

*The first time I made the dip, I had trouble finding the Coco Lopez at the grocery store. If you are having difficulty, check the wine/spirits section of the store. The cream of coconut should be located by the margarita mix.
