L’Eggo My Camp Waffles: An Easy and Delicious Recipe

A few summers ago, we were camping with our friends Mitch and Lora in the North Georgia mountains. Sean, Jackson, Lucy, and I had eaten our breakfast and were getting ready for an adventurous day. Lucy had walked over to our friends’ campsite to apparently stalk their breakfast too. Lora is a fantastic cook, and she always has the most clever ideas for camp food. Little did we know that the entree she was making would soon become a Green household staple, whether we are camping or at home.

Lora was making camp waffles. Camp waffles are waffle sandwiches with delicious inside fillings. Lora made Lucy a camp waffle and then asked the rest of us if we would like one. Lucy was sitting at the table smitten, so I could not resist. I couldn’t believe my taste buds. Where had these sandwiches been all my life?

Camp waffles are extremely easy to make, and they are ideal for camping or for a quick breakfast at home. The waffles can be quartered and served as finger foods, or they can be eaten whole. Camp waffles are great food on the go, but they may be scarfed down before you get to the car!

These sandwiches can be differentiated in so many ways, and they can please just about any taste. You do not need fancy ingredients or homemade waffles. We use Eggo Waffles because they are thin enough to crisp up to make a sandwich.

Since that summer day, Lucy requests camp waffles every weekend for breakfast as her special breakfast cuisine. As Lucy has grown older, she now makes the waffles herself. We serve them at the campground and at home often, especially when we have guests for breakfast.

Today, I am listing two of our favorite variations of this recipe that Lora originally served us. One version is made with Nutella and the other is made with apple butter. However, I do believe that you can use any jelly, fruit butter, or chutney in place of these ingredients. Also, feel free to leave off the cream cheese if you are not a fan. You can replace the cream cheese with a dab of cool whip or whipped cream before you close the sandwich up.

Camp Waffles

  • 1 box of Homestyle Eggo Waffles (L’Eggo my Eggo)
  • 1 Block or tub of cream cheese
  • Nutella– hazelnut spread OR
  • Apple Butter

Toast a pair of waffles well. We tend to like ours on the crispy side so that the filling holds up well and does not become mushy. Spread cream cheese on one waffle.

Spread either Nutella or apple butter on the second waffle.

Place your waffles together with the cream cheese facing the other topping. Then take a minute to enjoy this yummy goodness!

Although not listed above, I do believe that you can make this tasty creation a savory meal. Substitute the sweet spread for cheese, an egg, or replace the plain cream cheese with one that contains onions or chives. The options are endless, but the results will be magnificent. We hope you enjoy!!!
