Cool and Simple Key Lime Pie

I am blessed to be surrounded by friends and family who are excellent cooks. One of my friends, Lora, is a magnificent cook. I have been friends with Lora for 20 years, and she has made some impressive dishes during the time I have known her.
On a recent camping trip, Lora made a series of pies, one of which was Key Lime. All the pies were delicious, but in the summer heat, the Key Lime was out of this world. I am picky about Key Lime pies, but I could have eaten the entire pie! There is something about serving the pie cold that brings cool refreshment to a HOT summer day.
I asked Lora for the recipe, and she said it was the simplest pie recipe ever. I didn’t believe her because the pie had to be complicated to taste that delicious, right? Well, after Lora shared the recipe with me, I decided to try my hand at the pie. The recipe really was that easy, and I would like to share it with you. I hope this pie brings you much refreshment on a sweltering summer day.
This recipe is a doubled version of the recipe listed on the Nellie and Joe’s juice bottle (Check it out on Amazon). Lora gave me a tip to double the recipe so that it amply fills the pie shell. The doubled recipe is the perfect amount of filling for the pie.
I would recommend making this pie the night before you serve it. It tastes best when it is cold and has had the chance to firm.

Cool and Simple Key Lime Pie
- 1-9” graham cracker shell
- 28 ounces of sweetened condensed milk
- 1 cup of Nellie and Joe’s Key Lime Juice
- 6 egg yolks (no whites)
- Cool whip or whipped cream if desired
- Lime slices if desired
Preheat the oven to 350 degrees. Pour the sweetened condensed milk into a bowl.

Add the lime juice and stir well.

Add the egg yolks and stir until the egg yolks are dissolved into the mixture.
Pour the mixture into the graham cracker crust and bake for 15 minutes.

After the 15 minutes, remove the pie from the oven and let it cool for 10 minutes before placing it in the refrigerator.

Let the pie firm in the refrigerator for at least 2-3 hours. If you serve the pie warm and you use Cool Whip, the cream will melt on the pie.

Cut the pie into slices and eat them all! I’m just kidding… kind of. Slice and serve with whipped cream or Cool Whip if desired. Add a lime slice or two for some summer flair. I hope you love the pie as much as I do, and I also hope that it finds you well on the hottest of summer days.
