The Best Sheet Pan Fajitas

I don’t know about you, but during the week, it is hard to get dinner on the table. I either come in exhausted, Sean and I get involved in Jackson or Lucy’s school work, or a twist occurs where I am somehow wishing to postpone the grand dinner plans that I made. Recently, I came across a cookbook series about 101 things you can cook simply. One of the books in the series is 101 Things to Do with a Sheet Pan (Check it out on Amazon). I have been interested in one pan dinners, so I thought I would give the book a read.
The book gave me some excellent ideas regarding how to cook an entire dinner on one pan. The cookbook gives recommendations on how to create one pan appetizers, breakfasts, beef suppers, poultry suppers, fish suppers, and pork suppers. It also has sections on roasting vegetables and how to make sheet pan desserts.
I love how the cookbook is specific in its division of meats. If I have chicken in the fridge, I can go straight to the chicken section and peruse the recipes. I need this kind of simple in the middle of the week. The book also entails helpful hints regarding the most efficient ways to cook on a sheet pan.
As I researched, I realized that each cookbook in the 101 series is only $9.99. There are nights that I would pay $10 to figure out what I am cooking for dinner.
It is currently a weeknight and I have decided to try out a sheet pan dinner. This recipe actually calls for the use of two sheet pans, but only due to the nature of the recipe. I have chosen Beef and Chicken Fajitas. The cook time is only 10-14 minutes, and the recipe definitely looks easy enough for a weeknight meal. I also think that the meal will be a welcome addition to our traditional weeknight dinners. This recipe involves chopping, so I always run my knife through a knife sharpener (check it out on Amazon) before I begin. I learned in my cooking classes that a dull knife is a dangerous knife!

Beef and Chicken Fajitas
½ pound flatiron steak or other choice of cut
1 large boneless, skinless, and trimmed chicken breast
3 tablespoons vegetable oil
1 tablespoon of water
1 packet (1.25 ounces) fajita seasoning (approximately 3 tablespoons)
2 green bell peppers
1 large onion
Salt
2 limes, juiced
8-12 flour or corn tortillas
Dress the fajitas with some of your favorite garnishes, including guacamole (get our recipe here), diced avocado, sour cream, shredded lettuce, diced tomatoes, grated cheddar, or Mexican cheese blend.
Preheat oven to 475 degrees. Coat two sheet pans with vegetable oil. Slice the beef and chicken into thin pieces (around ¼ inch), across the grain. Cut the meat into bite size pieces if this is easier. Place beef and chicken in separate bowls. Mix the oil, water, and fajita seasoning together. Pour half the seasoning over the beef and half over the chicken. Work meat with fingers to ensure meat is seasoned on both sides. Let the marinade sit while preparing the vegetables.
Slice peppers into thin strips. Cut onion in half from top to bottom then slice and separate layers. Spread the vegetables on one sheet pan in a single layer and sprinkle lightly with salt.

Lay the chicken and the beef slices on the other sheet pan. Sprinkle with salt.

Place the meat pan on the center oven rack and place the vegetables above it. Cook until the meat and chicken are slightly browned on the underside, approximately 4-5 minutes, and then turn.
Sprinkle the lime juice on the meat and return to the oven until the meat is cooked through. Remove meat from oven.
Turn the vegetables and continue baking until they are lightly charred, approximately 4-5 minutes. Do not overcook. Move the vegetables, beef, and chicken to separate serving plates.
Turn off the heat of the oven. Lay the tortillas on the sheet pan used for vegetables and place the pan in the hot oven for about two minutes.
We tried the sheet pan fajitas, and I have to say, they were quick and delicious. Since all of us have different taste profiles in our family, we were able to customize our fajitas very easily.

I love everything on my fajitas. Sean takes his with the peppers, lettuce, and cheese. Lucy likes the meats, tomatoes, and cheese. Jackson is a meat only kind of guy. However, we were all very satisfied with the meal.
